Spiced Tempeh and Red Pepper Sausage Style Rigatoni

  • 100g Tempeh finely diced
  • 8 red peppers
  • 4 cloves garlic
  • 1 Tsp cayenne pepper
  • 1 Tsp smoked paprika
  • 1 chilli
  • 2 shallots

Cooking instructions

  1. Preheat the oven to 180oc, and place 4 of the peppers on a tray with a drizzle of oil and cook for 25 mins.
  2. Finely dice the shallots, red peppers, chilli and tempeh.
  3. Sweat down the shallots, chilli and red peppers until translucent.
  4. Then add the garlic.
  5. Add the spices and cook out for a few mins.
  6. Then add the tempeh and stir all together.
  7. Once the peppers have been roasted, leave them to cool and then blend them up.
  8. Add the mix into the pan and reduce and incorporate it all together.
  9. Season with salt and pepper
  10. Cook the pasta and stir into the sauce.
